Broccoli, Bacon and Cheddar Soup

I mean who doesn’t like these three ingredients mixed together!  This is a fall fav for my family for sure.

Ingredients

  • I use a large 6 quart soup pot for all of my soups.
  • Here are the ingredients
  • 8 cups water
  • 2 tbsp It’s Better Then Bouillion chicken/beef or mushroom stock
  • 2 sticks of celery
  • 1/2 a medium onion chopped
  • 6 pieces of bacon
  • 6 cups of broccoli
  • 1 cup of cheese of your choice I like extra old cheddar
  • 1 tsp of butter
  • 2 cups heavy cream
  • salt
  • pepper

Instructions

  1. First thing your going to want to do is get the bacon cooking.  I use scissors to cut it into small pieces before I cook it, it cuts down on the cooking time and the mess!
  2. While that is cooking I prep my vegetables.  I like to soften the onion and celery and will normally put it into the bottom of the pot with about a tsp of butter and cook until tender.
  3. Once that is done I add my broccoli, and the water and bouillon.  Once the bacon is cooked at it and the bacon fat to this mixture as well.
  4. Season with salt and pepper to taste and let simmer for about 3 hours.

Recipe Notes

Add the heavy cream and cheese.  I like mine really creamy and will run it through the blender you can also use a hand held if you prefer it less creamy.  You can add a little bit of cheese to your bowl as a garnish. Enjoy
