Here is a fast, 20 minute Beef Stew Recipe I know you are going to love. When winter hits, I start looking for those recipes that will warm my bones(especially being Canadian and dealing with our cold winters). One of my all time favourite recipes is my dad’s beef stew recipe. This stuff is hardy and so very yummy. My father did the majority of the cooking in our household and I have fond memories of this. Being raised by a single mother allowed him to develop all kinds of wonderful talents, like knitting barbie doll clothes and sewing our curtains and bedspreads. I also got my DIY knowledge from him. Let’s just say he was a man before his time.

This is a simple and yummy beef stew that I adapted for my Instapot.
You’re going to love how easy this Beef Stew is! Who doesn’t love a fast 20 minute meal!
Next, add the seasoning, onions and celery to soften.
Finish browning meat and then add vegetables and water. I add enough water to cover my vegetables, which is usually my fill line.
Next, select manual mode on your insta pot and set it for 20 minutes. That’s it! Super fast.

Easy Beef Stew for the cold winter months
My dad's famous Beef Stew, so easy to make and as tasty as can be!
Ingredients
- 2 pkgs stewing beef
- 6 stalks of celery chopped
- 1/2 lg onion chopped
- 1 small bag small red potatoes cubed
- 1 small bag small white potatoes cubed
- 1/2 lg turnip or rutabaga cubbed
- 1 small bag baby carrots (whole)
- 2 tbs sea salt
- 2 tbs black pepper if you like a little kick or half it if not
- 3 tbs garlic plus seasoning
- 2 tbs olive oil extra virgin
- 4 cups water - enough to cover vegetables so may be less or more depending on you instapot and amount of vegetables.
Instructions

1. Brown beef on saute mode

2. Add onions, celery and seasoning and brown until onions and celery are soft, about 3 minutes.

3. Add vegetables.

4. Add water to cover vegetables and stir.

5. Set use manual mode and set to 20 minutes.
Once done let slowly self vent for about 5 minutes then carefully vent to let off remaining pressure.
Serve with your favourite crispy bread and enjoy.
