Don’t have a lot of time? Here is an easy Gluten Free Peanut Butter Cookie Recipe your family will love!
These are one of my family’s favourites and best of all they are Gluten Free. One of the things you likely don’t know about me is that I have Celiacs Disease (I am allergic to grains) and finding a good baking recipe, that everyone loves, is hard to do! If you’ve tried gluten free, then you know already, that gluten free baking recipes can be dry and rather tasteless, well not this one! With the colder months approaching I find myself craving comfort foods… look out waist and hello yoga pants! Cookies happen to be one of those comfort foods for me and this recipe is so tasty. The rolled oats at least make me feel like I’m at least getting something nutritious. So, on those cooler days when a snack is in order these are a go to for me and I hope they become a go to for you as well.
This one is sure to be a crowd pleaser!
Prep time approximately 5 minutes
Cook time 15 minutes
Preheat oven to 325
You will need:
1 cup of peanut butter either smooth or crunchy – I like Kraft
1/2 cup of sugar
1/2 cup of certified Gluten Free Quick Cook Oats
1 Egg
(for some extra goodness you can add 1/2 cup of chocolate chips)
Mix all ingredients together until blended.
Roll into 24 balls, approximately 1 inch.
Place on cookie sheet about 2 inches apart
Flatten each cookie with tines of a fork in a cross pattern
Bake for Approximately 15 minutes or until edges start to brown lightly.
Be sure not to overbake.
I use a convection oven and I decreased my baking time by 1 minute. Just keep an eye on them as they bake. The edges should come out slightly browned.
Cool on baking sheets for 5 min and then remove to wire racks to cool completely and then enjoy! I enjoy mine with a nice glass of cold milk. I’m a cookie dunker… how about you?
