These Thumbprint and Chia jam cookies are super easy to make and taste delicious, they make me think of almond shortbread cookies.
Baked goods that are easy, keto and gluten free, are a win win friends. You can prepare the cookies ahead of time and freeze them or keep them for 3-4 days in the fridge. Don’t these Olive and Linen Towels look amazing!
The jam is below as well and will get you through some of those sweet cravings you might have. There is no boiling or sterilization needed!

Cherry Almond Thumbprint Cookies – Keto and Gluten Free
You will need:
Ingredients:
1 3/4 cup Almond flour – I like Bobs Red Mill
1 tbsp coconut flour -I like Bobs Red Mill
1/2 tsp baking powder
1/2 cup butter softened
1/2 cup confectioner’s Serve Sweetener
1 Egg Yolk
1 tsp almond extract
1/4 cup Raspberry Chia seed Jam – recipe below.
Glaze
3 tbsp Confectioner’s Swerve Sweetener
1/4 tsp almond extract
1 tbsp water (may need less you want it to be semi thick)
Instructions:
Cookies:
- Preheat your oven to 325°F and line your baking pan with parchment paper
- In a medium bow, whisk together your dry ingredients – almond floor, coconut flour and baking powder.
- In a large bowl beat together softened butter and sweetener until well combined and fluffy, then beat in egg yolk and almond extract. Make sure everything is well incorporated.
- Form into 24 dough balls approximately 1inch and place them 2 inches apart on baking sheet. Press each ball down to about 1/2 high and then press in the centre with your thumb – thus thumb print cookies!
- Spoon Chia jam into the hollowed out centre of each cookie.
- Bake until just starting to brown around the edges, 10-12 minutes.
- Cool on the pan, the cookies will not seem set but will continue to firm as they cool.
Glaze:
In a small bowl, whisk together all ingredients listed until you can easily drizzle over the cooled cookies.

Serves 12 (two cookies per person)
Each cookie is has 4.98g of carbs and 2.44g of fiber.

Saturated fatty acids: 5/69g

Ingredients:
125g cherries or berry of choice
3tbsp chia seeds
1 tsp lemon juice
1 tbsp granulated sweetener of choice or more to your taste
80 ml of water
Instructions:
- If using frozen berries, allow the to defrost. Mash the berries with a fork until a lumpy puree is created.
- add the chia seeds, lemon juice, sweetener and water. Mix well.
- Pour into a little jam jar or storage container and let sit – about 3 hours or over night if possible.
- once the chia jam has set, mix again to ensure all the berries and chia sees are evenly distributed.
Enjoy!

My favorite cookie recipe has maple syrup and will definitely make your pants tighter, but they are the best sugar cookies I’ve ever had:
1 1⁄4 cups sugar
1 cup Butter Flavor Crisco
2 eggs
1⁄4 cup regular pancake maple syrup
1 tablespoon vanilla extract
3 cups flour, plus
4 tablespoons all-purpose flour, divided
3⁄4 teaspoon baking powder
1⁄2 teaspoon baking soda
1⁄2 teaspoon salt

I really like just a simple snickerdoodle cookie, but another favorite recipe is homemade brownies covered in caramel and chocolate chips (recipe calls for pecans too, but my kids aren’t fans).

I don’t understand how you get your amount of carbs per cookie to be that low. I used the same measurement as you and when calculated in my fitness pal I get almost 10 carbs per cookie including the glaze and jam.
It makes 24 cookies and if you’ve used the same ingredients it should come out the same.
