Best Keto, Gluten Free Buns You’ll Ever Have
Okay guys, this is seriously the best Keto, Gluten Free buns or bread like product I’ve had. They are light and airy and the closest to “bread” I’ve made.
This recipe was shared by my sister and she got it from Keto For Real People.
I’ve tweaked it a little as it is a bit of a finicky recipe, so this is how it works best for me.
Ingredients:
1 1/4 cups super fine almond flour – the one that has worked best for me is Red Mill
5 tbsp psyllium husks – easiest and cheapest to buy a bulk store
1 tbsp nutritional yeast
1 tsp fine sea salt
1 tsp active instant yeast rapid rise – I use Fleshmans
2 tsp apple cider vinegar
1 cup very hot water
3 egg whites
1 tsp garlic salt
1 tsp Italian seasoning
Instructions:
- Preheat your oven to 350°F or 175°C
- Mix the dry ingredients in a large bowl with the exception of the rapid rise yeast. I have found my kitchen aid on the 2nd setting works best for these buns. The hand mixer either over or under mixed them..
- Take the boiled water (must be hot) and add the apple cider vinegar to it and gradually add it to the dry mix using the second setting on your mixer until all liquid is incorporated, add the egg whites and blend for about 2 minutes and then add the rapid dry yeast and blend until well mixed.
- Moisten hands and divide dough in half and then divide each half into three.
- You can shape into whatever shape you’d like – bagel, roll etc. I usually make buns and they are what is pictured here.
- Add the garlic and Italian seasoning to the top of the roll.
- Bake on middle rack for 60 minutes in a convection oven or 70 in a regular oven.
NOTE: They are done when you hear a hollow sound when tapping the bottom of the bun. Let cool before you cut into them.
