Peanut Butter Cookies – Gluten Free – 5 Ingredients
As requested, here is my Peanut Butter Cookie Recipe, only 5 ingredients and they are gluten free! These are one of my favourite cookies and they only take about 30 minutes from start to finish. No mess, and the taste is…. AMAZING!
You will need:
1 large egg
1 cup quick oats – must be certified gluten free if you do not eat gluten
1/2 cup of sugar – you can substitute applesauce if you prefer, but you may have to increase the oats to get the moist (as opposed to wet) texture needed.
1 cup peanut butter
1/2 tsp pure vanilla extract
You will:
Put all ingredients into a bowl and mix.
Form into 1 inch balls – makes about 1 dozen peanut butter cookies.
Make your cross pattern with a fork. After all, they are not really peanut butter cookies without that little pattern!
Add a peanut on top if desired.
Bake for 20 minutes in a 325 degree celcius oven.
Just keep an eye on them, you don’t want the edges to brown. Peanut butter cookies burn easily.
Let cool for 10 minutes and transfer to wire rack to continue to cool down.

Ingredients
- 1 large egg
- 1 cup gluten free quick oats
- 1/2 cup sugar
- 1 cup peanut butter
- 1/2 tps pure vanilla extract
Instructions

Let cool for 5 or 10 minutes and put onto wire racks to continue to cool.
Enjoy!
Recipe Notes
- Keep an eye on them as Peanut Butter Cookies will burn easily. You do not want the edges to brown.

Made these cookies 5/12/18 ~ used coconut sugar ~ came out Great! Not to sweet good texture & moist. I also used almond butter. Simple & quick ~ also good for dipping in your coffee. LOVE this recipe 😄 oh & husband approved 👏
